In Russia, there may be a shortage of red fish
Prices for fish and seafood, according to media reports, rose up to 45% in two months. What is the situation with the supply of red fish to restaurants? How have supply chains changed and what are the suppliers?
Russia will soon face a shortage of red fish: local producers cannot meet the demand for salmon and trout, and there are interruptions in foreign supplies. As writes RBC Pro, fish and seafood were valued as growth leaders. In March-April, growth in this category amounted to about 45%. Drivers include salmon, trout and tiger prawn, which are especially popular with restaurants for steaks, rolls and sushi. Only 30% of the environmental market required. The same trout of the required size in the country is grown only in Karelia and the Murmansk region.

For a significant share of the Belarusian company “Santa Bremor” has suspended the inventory of salmon in Russia. By source “Kommersant”, in one of the large networks of large suppliers of fish products under the Russian Sea brand. there was an increased price increase there, because of which the products began to be called unclaimed. According to another source of the newspaper, the reason is the export of exports from Europe.
Co-founder of the “Mnogo Salmon” network Alexander Mutovin says he used to work with salmon in the Faroe Islands. Now this crop is no more. Alexander Mutovin:
— We have always worked with Faroese salmon. Now this salmon is no more. From import there is also a Chilean version, it is delivered intermittently, but it is suitable for hot cuisine, for some other options, for sushi it is not the best product. We were 100% on Faroese salmon, now we are 100% on Murmansk salmon. From time to time we test trout, but these are extremely small volumes, it has a small size range, so you can plan an operation for 5-10% of the total volume. Ask now for more fish than the offer of this fish in Russia. They make only two hatcheries, in the summer they stand up alternately for prevention, which is not the saturation of the market with good salmon.
— Neither Murmansk nor Karelia currently prefer the volumes that restaurants require?
– There are volumes, it’s just a matter of price. I think someone ends up being left out, just can’t afford the price. Salmon, both Faroese and Murmansk, cost about the same. These prices are higher than in January-February, also Murmansk salmon. The good news is that a number of non-salmon positions have pulled back. Considering prices have gone down. We choose the observed tension on the client, we fulfill its purpose, supplement with positions that do not contain Salmon: tuna, shrimp, other protein options, supplement with seasonal dishes. It seems to me that this is the best strategy, and there the plants should end up with prevention, in autumn it is usually easier with salmon than in summer.
Despite the difficulty with the delivery of foreign fish, in Moscow today started festival “Fish week”. It contains more than fifty reviews, 3 collected stores and about 60 fairs. As stated on the website of the City Hall, Russian fish and seafood are represented there.
