Lyon 1st. The amazing tastings of the Toqués du Fromage
Above the wine cellar VinicaMontée de la Grande Côte, opened on November 26, a place dedicated to the discovery and tasting of cheese: The cheese freaks. So far, the concept, launched in 2021, was itinerant. From now on, Antoine Bouhin, dairyman, and Quentin Chatenay, wine merchant trained at the university of wine, have a place to organize their fun workshops and tastings.
“We are far from formal tastings. We want the participants to translate into having fun and above all a good time eating good things”, explains Quentin.
Cheeses, wines, beers… in short circuits
Cheese and jam or chocolate, cheese and cider, wine or beer, the amazing combinations are endless. “We always offer at least one pairing with chocolate and jam”, explains Antoine, eager to surprise the guests. And on the plates: “we work a lot with raw milk cheeses, often off the beaten track”adds the dairyman, who gets his supplies directly from the producers, from the Scapa (cooperative) or from Patrick Sourbès (cheesemaker from mother to son in Oullins, Saint-Genis-Laval and Sainte-Foy-lès-Lyon).

A selection that favors short circuits, which the two friends also apply to the wines offered for pairings, which are organic or biodynamic, and do not travel more than 150 kilometers to reach their counter. Certainly pioneers.
