The chief infectious disease specialist of the FMBA of Russia, Doctor of Medical Sciences Vladimir Nikiforov warned that homemade products in the form of pickles and canned food can be dangerous to life and health. About this he told portal Ura.ru.
Nikiforov points out that such pickles may contain botulism toxin, which turns out to be toxin for some people. At the same time, it is impossible to determine its presence – it does not have a special color, taste or smell, such a jar does not swell.
“Botulism can be found in home-made salted fish, in any home-made canned food – mushrooms, pickled or pickled vegetables. The more multicomponent the contents of the jar, the more likely it is that some of the ingredients will get a spore that will germinate, and a vegetative form will appear, which will begin to synthesize the toxin, “Nikiforov said.
The infectious disease specialist spoke about the signs of poisoning – dry mouth and fog in the eyes, impaired speech, breathing, swallowing. From the moment of using the product to the appearance of botulism, it takes from six hours to one and a half to two days, the doctor added.
He said that in Russia the mortality rate from botulism is 8-10 percent. For nine months of 2021, according to Rospotrebnadzor, 15 people died from him.
