Between raclette and bistronomic cuisine, this new restaurant opens in the heart of Toulouse

The best of mountain gastronomy, but also a real bistro menu. It’s the creed of the slope, a brand new restaurant that opened rue de Metz a Toulouse at the beginning of December 2022.
Fourteen kinds of raclette
A new address that should delight both lovers of good comforting winter dishes and tenants of finer cuisine. Always with one thing in common: quality products.
“On proposal fourteen different kinds of raclette, Thomas explains Vidal, the owner of the place. We get our supplies directly from a producer in Savoie, we also have Swiss raclette which we rarely find. More generally, our cheeses, like our charcuterie, are top-of-the-range. »
Raclette box
For a tartiflette, it takes 17 euros per person, the raclette is 24 euros per person. ” And all our cheeses are available to take away, explains Thomas Vidal. We have raclette boxes with five different cheeses and you can lend a raclette machine. »
A bistronomic menu according to the seasons
For those who prefer the bistro part of the Versant menu, the owner promises “refined dishes”. Poultry spindle with dried fruitarm of braised octopus served with a mousseline of sweet potatoes and a spicy sauce with genepi or a sweetbread with chanterelle mushrooms accompanied by homemade tagliatelle.
“The menu will change with the seasons,” explains Thomas Vidal. We also offer really nice pastries. »
Second Restaurant
At lunchtime, the dish of the day formula is 15 euros, the starter-main course or main course-dessert is 19 euros, and the complete formula 22 euros.
This is the second restaurant opened by Thomas Vidal. Le Versant is indeed its big brother, in Limoges. A first restaurant crowned with the title of master restorer. “It is also our objective to obtain it for our restaurant in Toulouse”, confides the boss.
