JUSTICE: The Educational and Daytime Activities Unit of Dijon is the winner of the professional culinary prize of the Parcours du goût
Each year, the Ministry of Justice organizes a culinary fair for young people taken into care by the judicial protection of youth.

The culinary fair organized each year by the Ministry of Justice for young people supported by the judicial protection of youth (PJJ) took place on October 15 and 16, 2022, at the Manet farm in Montigney-le-Bretonneux (78) for its 22nd edition. It is the only national event of the PJJ open to the general public. This year, 10,000 people were welcomed over 2 days, to discover new recipes and discover local products.
The UEAJ of Dijon obtained the 2nd national prize in the professional culinary competition (out of 23 participating teams), with its original recipe, a crispy sweet potato waffle with its parsley button mushroom salad and whipped cream with Meaux. A young person from UEAJ prepared and presented this gourmet dish alone, which is particularly exceptional, the teams being systematically made up of several young people. This boy has a professional project in the kitchen and is supported in it by the UEAJ of Dijon, in particular via the application restaurant where he exercises twice a week. His participation in the CEO has confirmed his desire to direct his professional future towards the food trades. And confirmed that he is good at it. It should be noted that he received congratulations and encouragement from all the members of the jury made up of great chefs, in particular thanks to his technicality and his management of emotions.
The Dijon stand was designed on the theme of flea markets, thanks to loans from La Recyclade (decoration, tableware and furniture). The regional products presented delighted the taste buds of visitors. Everyone was able to open their palate to many specialities… On the savory side: savarin brillats from Fromagerie Delin, local specialties from Metro Dijon, parsley hams from Gastronomia, Mitanchey and Riandet delicatessens, “Du pain pourmain” bakery. And on the sweet side: fruit juice from the Dijon factory Refresco, Anis candies from Flavigny, Hénon chocolates, Vedrenne syrups, jams from the Etaules farm.
Many other local products from 100% Côte d’Or, cooking magazines offered by Propulse be creative, a game of Monopoly and a Burgundian recipe book from the Librairie Grangier, not to mention the setting up of sewing workshops with the “kelle fabrik” association of the Maison des associations de Dijon, have given considerable thought to the attractiveness of the territory for a mainly Parisian public.

The show and culinary competition for young people supported by the judicial protection of youth
On October 15 and 16, 2022, nearly 130 young people taken care of by the judicial protection of youth (PJJ) will take part in the 22nd edition of the Parcours du goût. This national culinary fair and competition organized by the Ministry of Justice will take place in the presence of great chefs and will have as its theme “gastronomy right to your fingertips”. Open to the public, the event will take place this year at the Manet farm in Montigny-le-Bretonneux (78).
Convince a jury of professionals during a national gastronomic competition
This gastronomic competition welcomes young people confronted with justice around the theme “gastronomy right down to the fingertips” and highlights eco-responsible consumption. At the stage of television cooking shows, the teams must surprise an exceptional jury by innovating to present a gourmet recipe made with local products and to be enjoyed without cutlery.
These recipes require several months of preparation. The 23 teams competing this year will compete during this very rhythmic weekend, under professional conditions: time allowed, coaching, technical advice and a demanding jury.
The event is sponsored by Louise Petitrenaud, food columnist, and Mohamed Cheikh, cook and winner of the Top Chef show in 2021. The jury is co-chaired by Jessica Préalpato, pastry chef elected best pastry chef in the world in 2019 and Fabrice Brunet , best worker in France, creative manager at Lenôtre.
Animation of a culinary fair and tastings of regional specialties
At the same time as the competition, the young people will animate a real culinary fair and will make discover their territories with tastings of regional specialties. Animations and activities will also be offered, both to young people and to the general public (discovery of the PJJ, master class by a pastry chef from Maison Ladurée, preparation of dishes, awareness of sustainable development, etc.). The Parcours du Goût benefit from the support of many partners and benefit from the high patronage of the Ministry of Agriculture and Food Sovereignty.
Supporting young people towards sustainable professional integration
This event aims to promote the skills and investment of these teenagers who work all year round in training restaurants or around educational projects related to cooking and service. It also allows young people to work on issues of health and balanced diet and to support them towards sustainable social and professional integration.
Signing of agreements by Éric Dupond-Moretti, Keeper of the Seals, Minister of Justice
Eric Dupond-Moretti, Keeper of the Seals, Minister of Justice, will travel to the Palace of Versailles on Thursday 13 October for the launch of this 22nd edition of the Parcours du Goût. In the presence of famous culinary chefs, the Keeper of the Seals signed several agreements, in particular with the CFA Mederic and the Maison Ladurée, in order to provide for the reception of young people from the PJJ on internships and on apprenticeship contracts.
