Very busy, Sylvie Cadenet does not have a minute to herself. President of the association of Carmes merchants for five years, she prepares the night on Thursday evening. “It’s a big organization,” she admits. An evening that attracts no less than 3,000 people.
This manager loves challenges: “I love my job, she admits. I’m lucky to have good energy. You need it to work days that start at 5 a.m. and end at 8 p.m.
Sylvie Cadenet was not destined to work in the bakery business and to become the wife of the creator of Cadenet bread, whose secret recipe makes people happy every day. “Before following my husband, I was a special education teacher. A far cry from a “ferment breeder” as my husband likes to call himself”.

She does not regret anything. On the contrary. Sylvie Cadenet likes the atmosphere of the markets and her role as president, which forces her to constantly come up with new ideas: “As in everything I do, I am totally invested. And I was able to observe that this market had evolved well. The nocturnes have provided another clientele and the upgrading of certain boxes has brought a new touch”.
Late nights are fashionable, “But be careful, each hall gives it an identity: that of Les Carmes is more family-oriented than bodega, even if several DJs set the tone”.
To fit in perfectly with current events, Sylvie Cadenet has also introduced recyclable cups for wine, beer and water, thus imposing zero glass on the market. Sylvie deplores the controversy started after Victor-Hugo’s late-night opening with certain aggrieved cafe owners, it seems, “the late night is complementary to the activity of cafes and brasseries. Everyone works differently during a night shift, but it benefits everyone”.
Thursday April 21 from 6:30 p.m. to 10:30 p.m. in the presence of many DJs.
