Probably the most meticulous chocolate bestiary in Lyon inspired by animal reality.
Florent Thevenon does nothing like the others. In addition to traditional Easter eggs, bells and fish, the chocolate maker from the 6th arrondissement has come up with a whole bestiary that allows him to stand out from the fifteen or so pure chocolate makers in Lyon and the twenty-eight pastry and chocolate makers in the city.
Listen to the “6 minutes chrono” with Romaric Boilley, president of the Union of chocolate pastry chefs and ice cream makers in the Rhône: “Lyon is a stronghold of chocolate in France”
Florent Thevenon is a chocolatier who does not fit into the mould. For Easter, he makes his own very realistic (silicone) casts. Lion, bear and cub, elephant, wolf, dinosaur, chick, horse, hedgehog, peacock, gorilla, frog, crocodile, owl, giraffe, cobra…
The hyperrealism of his subjects is striking. He works on renderings with remarkable meticulousness that gives effect to animal hair, fish scales and crocodile skin.
The chocolatier first completed an apprenticeship in pastry in the Loire where he is from, before leaving to discover chocolate at Pascal Caffet (MOF and world pastry champion) in Troyes. He then left to refine his knowledge with James Berthier (Paris 20th) then with Jen-Charles Rochoux (Paris 6th) where he remained for eight years, managing the manufacturing laboratory for the last few years.
In February 2012, Florent Thévenon opened his shop in the heart of the 6th arrondissement, at 53 rue Tête d’Or, in this district renowned for its food artisans.
