The establishment was installed in place of a sushi sign, within the bubbling subway station, the busiest of the entire Tisséo network, where lines A and B intersect.
What is the smash burger?
The smash burger? It’s here new trend straight from America. A concept that is a hit in the big cities of France. This is a hamburger whose steak is not served thick, but crushed on a hot plancha for a few seconds, as Zelda Felici explains.
“We chop the meat, we make it into balls, we put it on the plancha, and we flatten it so that it is caramelized …”
At the end of the day, Broochy invites you to savor “A fine and caramelized steak”, with very juicy beef.
Only in short circuits
Zelda and Ghali have an atypical journey. These two agricultural engineers, graduating from Purpan school, are committed to “promoting sustainable agriculture that resembles us. This is why we refuse to go through intermediaries and we work only in short circuits’, develops Zelda Felici. And even if the sign claims Broochy’s “American trend”, it supplies itself “as much as possible with French products ”.
the pain comes from a bakery in the Saint-Michel district in Toulouse, the Salers beef of farms in Lot and Lot-et-Garonne, oil of the Basque Country, the mustard du Loiret … Only the Cheddar comes from Ireland, “but even there we buy it directly from a producer, with no middleman”.
No freezer, “everything is fresh”
As a result, the menu is as thin as the steaks. “Everything is fresh, so you can’t have a very wide range, ”Zelda Felici supposes. “We don’t have a freezer, only a cold room”.
For now, Broochy only offers two burgers: the classic (steak, cheddar, pickles, ketchup and mustard) or oklahoma (steak, caramelized onions in meat, cheddar cheese, ketchup and mayonnaise). In a second step, the brand will add to the menu of chicken fries, and one fried vegetable of the moment (“Sweet pepper or asparagus, for example”). On the price side, count 9 euros for a burger, or 13 euros with a formula, which includes a drink and homemade fries (with potatoes from Gironde and Lot-et-Garonne).
The brand offers its dishes only to take away, without reservation, and refuses to go through Deliveroo and Uber Eats, “because we are against these platforms, and the working conditions they impose” on their delivery people, insists Zelda Felici.
Finally to know that Broochy will be limited to 200 burgers per day. First come, first served !
