Near Rouen, this bakery makes New York rolls, and it’s all the rage!

When they put on sale their first New York rolls, Jonathan and Adeline did not expect such a success. “Now we have customers who only come for that”, enthuses the couple. Together, these two enthusiasts took over the Noham bakery on October 15, 2022 in Deville-les-Rouen (Seine-Maritime). This is their first business for these lovers who have been working in the field for more than 15 years.
“That was not why the best period,” quips Jonathan. The trained baker-pastry chef lists the many difficulties: “With the energy crisis, our bill went from 1,000 to 4,000 euros. And then there is also the surge in raw materials. “But not enough to kill Adeline and Jonathan, more motivated than ever. To get out of it and stand out, they have developed “the specialty of the house”, the famous New York roll. And it hits!
“A mix between Viennese pastries and pastries”
Nicely arranged in a row on the bakery shelves, this round and puff pastry hold the gaze! “We saw that in Paris and a lot on Instagram. That’s where we thought we were going to do it, ”insists Jonathan.
But what exactly is a New York Roll? “It’s a croissant dough that we garnish with flavored pastry cream. We try to vary the garnish, according to the desires”. And the baker adds: “In fact, it’s a bit of a mix between pastries and pastries. »
The batches of the day are pistachio or Nutella flavors. Special mention from our side for the New York Roll at speculoos! Count about four euros to be able to leave with your little sweetness.
100% homemade
As with all of the store’s products — aside from the muffins — Jonathan and Adeline’s New York rolls are 100% homemade. “It takes work, it’s a skill,” says Jonathan. For his croissant dough, he counts about six hours of work, with rest time. With it, he can make about fifty rolls.
“Before making it, we had never tasted it. It was really a test, and it was immediately appendix. And then, over time, we improved the recipe! »
And if the gourmands are not satiated, from the New Year weekend, the galettes will come to stock the shelves of the bakery, also 100% homemade. Who said that after the holidays, it was the end of excesses?
