New restaurant in Toulouse: they make you discover this trendy sandwich in an unsuspected place

Thursday morning, it’s delivery of brioches to the Roll ! Open since September 8, 2022 in the gourmet rue des Filatiers in Toulouse, this restaurant tries to operate, as much as possible, in a short circuit. It is therefore on foot that the bakers of EK Pâtisserie, an establishment located in Les Carmes, come.
They quit their job to set up a restaurant
“We try to use as many local products as possible. For example, the beef comes from Aveyron. We have a chicken from the South-West, which we buy from our butcher in Tournefeuille: Maison Phenicie. The soy comes from Pau and the trout from the Pyrenees! “, lists Maxime Vegas, co-founder of the brand with his partner Joris Kinimo.
With Le Roll, the two thirty-somethings wanted “emancipate from the office”. Maxime worked in a large group, while Joris worked for an Airbus subcontractor. “It feels good to feel responsible! “says Maxime who manages all the communication and social networks part of the sign.
Behind the stove, Joris is in charge. Passionate about cooking, he loves to discover flavors from around the world.
“We complement each other well! For this project, we were able to match our visions to bring our universe to the restaurant. We wanted to add color and touches that recall our travels.”
Sandwiches inspired by lobster roll
As its name suggests, the Roll is inspired by the famous lobster roll. If you are angry with the language of Shakespeare, we will do the translation for you: Lobster = Lobster. But here there is no question of eating the delicious crustacean. “We think it’s too expensive. And above all: you can’t find lobster on the short circuit! “recalls Maxime Vegas. So what’s in these brioche buns?
“Our best-seller? It’s the Cheese roll (minced marinated beef, grilled cheddar, crunchy vegetables, homemade pickles, editor’s note)!”
Count less than fifteen euros for a roll accompanied by a salad or potatoes. Aside from these famous sandwiches, the establishment also offers balls – a way to satisfy vegans – and homemade desserts. “At the moment, we are making a tatin-style brioche. People love it! “, testifies the 33-year-old co-manager of the establishment who still hides a very nice secret.
An almost secret cellar
In the basement of the Roll, customers can discover a superb cellar. Swing seats, wooden floors, touches of color, library…
An ideal place, like a real tea room, to relax over a brioche and/or a coffee. “You can even come with your computer to work”, slips the boss.
