Haru, the best sushi in Lyon
Thorny question: “Where do you eat the best sushi in Lyon? »we may have found the answer, or at least one of those who can appear on the podium alongside the Wasabi (Lyons 7e). Here, the chef, Tung Nguyen, fell into sushi while studying in Lyon. Initially, he had come to the capital of Gaul to do a bachelor’s degree, then a master’s degree in commerce (which he obtained), but his odd jobs in Japanese restaurants gave him a taste for Japanese cuisine and gastronomy.

So he went to Japan, to Chiba, near Tokyo, to improve his skills and learn the art of cutting fish, preserving it, and mastering seasonings. On his return to Lyon (by his own admission “the best city in France” — we haven’t contradicted him), he opened Haru (which means spring in Japanese) in June 2019.

And in his little restaurant decorated in origami, he puts his learning into practice: sushi, sashimi, maki… which he offers with pink rice. An idea he had for Valentine’s Day in 2020 that he kept and which has become his trademark. We enjoyed a Kyoto Roll, bluefin tuna maki rolled in very fragrant leaves of perilla (also called shiso), but above all a onigiri with shrimp and Edamame generously stuffed. For sure, we will come back.
