A new wine bar with tapas and sandwiches opened its doors in the Saint-Aubin district of Toulouse at the start of summer 2022. Pierre Ramel. He filled it with Pauline, his company, on June 8, by opening La Bonne Etoile on rue… de l’étoile. before crossing all the emotions.

Time to get started

Aged 40, Pierre Ramel has spent half his life in the restaurant industry. “I had already had the idea of ​​opening my establishment, and then came a time when I started, he concedes. I was looking for a place, and I came across this one. He has us more. It was on 16 rue de l’Etoile that the couple set their sights.

“I started, I’m with Pauline, my company, who is also my partner. ” If she is ” not in the business “, the experience is there: ” she grew up in ithis parents had a hotel-restaurant in Figeac (Lot)”, explains Pierre Ramel.

“The genesis of the project is that I wanted to do something that I like, looks like me. We both love wine, we started with this idea of ​​a wine bar with a rather favored range on natural wines. Then, more than tapas in Spanish mode, I especially wanted to work with live, local producers, I didn’t want to go to a restaurant with a classic menu where people sit down, stay at the table…”

First in the evening, then at noon

The launch went smoothly. “It was a bit of a quiet period, we only opened in the evening to hang out. » The 60m² room has 30 seats.

Since September, the establishment has extended its opening hours! “At noon, it’s a formula that is more effective on the business clientele that there is in the neighborhood, for people who work”, specifies Pierre Ramel. Who favors the homemade… and again and again the local. “We follow the seasonality of the products: at the moment, we have a gorgonzola toast pear and grape. We won’t find any soon, so we’ll move on. ” The delicatessen comes from a producer of black pork from Bigorre in Lannemezan. Cheeses, they come straight from the Marzac de Revel cheese dairy.

La Bonne Etoile – which bears this name as a nod to “the m song, a the street, but also to aero, them stars, it works well” – full of projects. The duo at the controls “would like to make evening entertainmentbringing in producers and winegrowers to talk to us about their products and their way of working”.

A weighty obstacle

It’s the realization of a dream… but it has been modified, and still is in mid-October. “There was work on the building next door, and following that, our facade worked, and our building was in danger”, says the manager. Thus, since the beginning of September, the front of the establishment composes with a huge obstacle in front of her.

“The company that laid the concrete blocks had technical constraints. They didn’t really know how to do it and told us that the blocks could be laid in front of our front door. In the end, they shifted as much as possible and we get to our door, so we keep the activity. But we really lost visibility.”
