Lyon 1st. Smash Burger Joint, the essence of the burger
Revening towards an original burger, the one we eat in the United States »this is what motivated Guillaume Soucarre and Fabien Ainardi to launch Smash, which, as its name suggests, offers smash burgers. For novices, it is a burger whose meat is crushed on a griddle at a very high temperature so that it caramelizes on the edges.
Every morning, the two friends chop the fresh Charolais meat and prepare their steaks which they will later slip between two slices of potato buns fluffy, then get down to preparing the 30 to 40 kg of potatoes to turn them into crispy and melting fries at the same time, which will be cooked twice, the last of which just before serving them.
We tasted the two burgers on the menu (yes, there are only two, and that was enough): the classic with its ketchup and its Heinz mustard, the cheeseburger in its simplest form; then the special, whose sauce, iceberg lettuce and brunoise onions are reminiscent of the Big Mac, but much better and for almost the same price. The fries are also perfect. A perfect match(es).
