Toulouse: a colorful restaurant opens in place of an institution in the city center

Don’t call him anymore Cafe Baggio ! Since this Wednesday, April 20, 2022this institution of Toulouse a place left to Rosa Negra “Bodega side Barcelona”, a brand new restaurant High Color. After four weeks of work, the establishment managed by Julien Roumagnac and Vincent Vaissiere offered itself a first service widely awaited by its entire team… and the first customers.
A trip to Andalusia
Warm atmosphere, large tables, traditional dresses added to the walls… No doubt, the transformation has been successful for this second Rosa Negra, after that of the Victor-Hugo district! As soon as you pass the doorstep, the trip to Andalusia is guaranteed with an intoxicating smell of Iberian ham that leaves no one indifferent.

A place of sharing
In this new establishment located between Compans-Caffarelli and the alleys of Barcelona, not the slightest embellishment, but authenticity in the image of its managers and their team of 8 people. The objective is simple: to bring generations together in a popular and festive setting. Whether it’s for a coffee in the morning, enjoying a good brasserie-style meal at lunchtime or chatting over an aperitif and tapas in the evening, La Rosa Negra aims to stir things up around a menu that will change every two weeks. . “Everything is fresh, everything is homemade”, outbids the boss.
On the menu side, there are beautiful cuts of beef, Ibaïama pork, the traditional duck breast, Hispanic salads and fish such as hake, sepia or sea bream. Dishes to share are also on the menu, as is a large selection of tapas (patatas bravas, Iberian charcuterie platter, lukinka a la plancha, etc.).
Happy Hour from 4 p.m.
Another particularity of the establishment: the happy hour will start at 4 p.m. and end at 7 p.m. “We’re going to Spanish time,” laughs Julien Roumagnac. Giant mojitos, cocktails, a large selection of beers, rum, whisky… The team has thought of everything!
“The atmosphere will be even more festive from Thursday to Saturday evening when the establishment will close at 3 am. We will push the walls to really dive into a Bodega atmosphere. »
The outdoor terrace turns into a patio with a second bar ideal for summer evenings.
An inauguration party
Once past the rush of the opening, the whole team intends to focus on animations that will support this friendly spirit. Bandas, flamenco guitarists, Sevillian dancers… The pleasure will not only be found in the plate, but indeed in the general atmosphere of the establishment.
An inauguration evening is also scheduled for April 29. “There will be a lot of people”, specifies the manager of the establishment who adds “that many sporting events will be broadcast in the restaurant”.
