Toulouse: at “Entremets”, Laurence and Marie divert the codes of sweetness into a savory version
Gourmet entremets with caramels
You might think they are sisters, and yet they are mother and daughter. Laurence and Marie Guille have just opened Entremets, Creative Pastries, at 21 rue Pharaon, in the Carmes district, in the heart of Toulouse. The sweets they serve reflect their boutique: original, refined and comforting. At home, in a cozy atmosphere – with rattan chandeliers, hanging plants and a Pyrenees marble counter – you can savor the same cakes in a sweet or savory version. “Our goal is to offer food to everyone, especially those who don’t like too much sweets,” says Marie. In other words, you can order a Paris-Brest with goat cheese and blackberry cream, a cod bun, a pesto cabbage – goat cheese, a Reblochon cookie and bacon. Unless you prefer a cookie square, a baba Baileys or a coco banana… Here all the pleasures are allowed, whatever the time. “It happens that our customers order savory dishes at snack time accompanied by a coffee,” says Laurence.
Retraining
Former bank employee, specialized in the installation of craftsmen, tradesmen…, the latter chose to follow her daughter in this business, within the framework of a professional retraining. “I want to go to the other side of the barrier and settle down. In addition, with Marie, we wanted to set up a project together,” says Laurence. For this, she had to go back to school and pass her pastry CAP. “It’s not easy, in France, when you already have a job,” she admits.
As for her 25-year-old daughter, on the strength of her double degree – master in culinary design and CAP in pastry – she manages to develop real little edible jewels.
communicative happiness
If at the Guille’s, we are pastry chefs from daughter to mother, working as a family has its advantages and disadvantages. “We can tell each other everything and sometimes too much, especially when we are tense”, slips Marie.
Today, the duo works hard to run Entremet, six days a week. Particularly good at interpersonal skills, Laurence, 49, is delighted with her change of life.
“I make people happy with a cuisine that I like, by working with my daughter, in a place that we have created. This represents all the happiness in the world, ”she slips.
A contagious happiness since their living room is always full. Installed only since November 16, they already have many loyal customers among their customers. “In the evening, people like to stop to get us salty things for an aperitif or to eat with a salad”, adds Laurence.
