Born in Rodez in 1988, a lawyer by training, he became a brewer in the Pink City.
It is well known that the law leads to everything. Sometimes even to become a brewer. Such is the trajectory of Guillaume Vieilledent. Born in Rodez, in 1988, into an Aveyron family, he studied law in Toulouse and obtained a master’s degree in labor law. A lawyer for five years, in Paris, in a company, he headed south in 2017 with the birth of his child, towards Lot-et-Garonne.
It was there that he took a professional turn and, three years later, in June 2020, he made his plan to become a brewer a reality. But, he had no premises! That of La Garonnette, in the Pink City, was released on November 1, he took up his quarters there and he released the first beers and sodas on December 19. The start of a new life.
If Guillaume Vieilledent was immersed in law, this universe is not, however, completely foreign to him. While his great-grandfather Auguste was at the origin of the creation, in Rodez, of the Sab (Aveyron drinks company), which has since disappeared, his great-uncle Raymond distributed the Chépa lemonade, “with pure sugar syrup. , sparkling, digestive, refreshing “(it is written on the collector bottles that the grand-nephew has treasured), with premises located on avenue de Montpellier and route d’Espalion.
The new Toulouse brewer had that in his blood a bit. And then, the project did not fall from the sky by chance. “During a trip to the United States in 2014, I discovered a brewing landscape on” The Blues Road “between New Orleans and Chicago, he recalls. I was a beer lover but not a fondu. I saw myself creating an independent craft brewery “.
On his return, his company offered him a two-hour brewing workshop where he got to know more about the fundamental techniques. He did not forget: “I immediately put into practice and made my beer at home, 20 liters in the kitchen. I got into the game, with more and more recipes, and of research”.
Flying on his own for almost a year, Guillaume Vieilledent now offers permanently two beer recipes and as many sodas, as well as a range of around thirty ephemera “depending on seasonality and my favorites”.
“For a clientele, the vast majority of whom live 200 meters away,” rejoices the owner, who selects local producers. Barley, seigne, oats, wheat are organic and come from the Tarn and, if the hops are Alsatian, they should ultimately be of Haut-Garonnaise origin.
The fruits are fresh and, if citrus fruits grow in Murcia, the cooperative is family-owned. Speaking of family, most of the labels are works by Guillaume Vieilledent’s mother artist. To sell his beers and sodas, he uses social networks (Facebook and Instagram), goes through resellers in Toulouse (wine merchants, delicatessens, bars …), has the confidence of restaurateurs and does not neglect full markets. vent.
In Aveyron, and more precisely in Rodez, its products are to be discovered at the restaurant La Maison and at the fishmonger Aderhold. “I am fully satisfied with what I do, concludes the 30-year-old from Aveyron. I am fulfilled in this new profession, where I can tell a story”.
