We discovered, two years ago, the talented Rebecca Rohmer alias ” Riv’K“, 27 years old, today and full of energy, student of Dominique Bouchet rue Treilhard in the 8th arrondissement, of Yannick Alleno in the days of the Parisian Terroir at the Stock Exchange, of Christian Constant at the Cocottes of rue Saint-Dominique, of Cyril Lignac aux Près – who made his mark in a Telavivian style, alert and uninhibited. She has refined her style, playing with distant spices, the reminiscences of her roots on her mother’s side, composing a symphony which is hers alone, with ideas of today and always.
The idea of a menu at home, in its pretty frame decorated with mirrors? A “kung pao” caramelized cauliflower, fashionable with Sichuan spices, Eyal Shani’s favorite place at Miznon’s, a Tunisian brioche, “fricassee” style, with egg, tomatoes, tuna, onions, black chickpea hummus, tofu tempura, nori chips. Without omitting very pretty avocado spring rolls, sesame sauce and ponzu. In short, this is Israeli cuisine spicy with Asian spices and condiments.
The dishes have the same style, with a creamy parmesan polenta, an exquisite vegetarian tagine dafina style, an exquisite salmon fillet, very soft, and very undercooked, with miso, flanked by millet seeds, edamame carrots, sikhs, yuzu and shizo leaves. Finally a nice satay poultry schnitzel with a little Indian air, with mashed potatoes mashed with a fork.
We drink on it the exquisite Syrah of Bynamina, with the airs of Saint-Joseph in the fashion of the new Israel. And we do a spell on the rich desserts: soft chocolate / halva, sugar-free and gluten-free, very addictive, French toast with orange blossom ricotta, cinnamon and orange zest or yet another caramelized yuzu French toast, with its black sesame ice cream.
