The Gambero Rosso 2023 Guide
Seasonally adjusting and diversifying: this is the real challenge of the future, taken up by the most attentive professionals and which prompted the guides to introduce the new innovation award. It was the time of the gelato maker-entrepreneur, a professional attentive to the quality of the product but capable at the same time of managing the place with great intelligence, starting with the staff. An increasingly “agricultural” ice cream but no less attentive to technology and intriguing mixes with other sectors of the food and wine world. An ice cream in which nature and science form an increasingly indissoluble combination. If on the one hand the return to the earth triumphs with great attention to the recovery of waste, on the other the collaborations of master ice cream makers with chefs, pastry chefs, chocolatiers, nutritionists and wineries are multiplying to give life to an ever wider proposal, to ensure that the ice cream shop, without losing its distinctive character, broadens its range of action with an offer that covers the whole year.
