New direction for future oenologists in Toulouse

Another change at the head of the Diplôme National d’Œnologue (DNŒ) in Toulouse. While Patricia Taillandier had ceded her post to Christian Chervin in 2021, the latter is already giving way to Florence Mathieu.
“Associate Professor since 1998 and University Professor since 2007, I am attached to the National Polytechnic Institute of Toulouse (INP) and the National School of Agronomics of Toulouse (Ensat). Since the end of the year, I have been working as a pair with Jalloul Bouajila, from Paul Sabatier Toulouse 3 University” explains Florence Mathieu.
Specialized in Biological Engineering and Food Quality, the new co-director has been teaching at the DNŒ since the 2000s. “This appointment was not premeditated but is not surprising either, each taking on responsibilities or training directions over the years within Ensat”.
Florence Mathieu must finalize the implementation of the reform of the successful oenologist diploma at the start of the 2021 academic year at the request of the Ministries of Agriculture and Higher Education.
“In its new version, the training notably includes a week of mobility. Starting this year, students will take around thirty hours of lessons on the theme of their choice: sustainable and prospective wine-growing economy at Montpellier SupAgro, oenological biotechnologies at Montpellier Pharma, knowledge of Champagne and sparkling wines in Reims, the eco-design of wines in Dijon, the establishment of the reputation of grands crus in Bordeaux, or other fermented and distilled products, such as Armagnac or Cognac, with us » list the co-director.
Currently, all of the 36 first-year students at the Toulouse DNŒ are following a work-study course. “The management made this choice last year, but this could change in the future depending on the demand from students and companies”.
