A Top Chef trained with the best arrives in Rouen
The native of Carcassonne with a melodious accent is slowly getting used to the rain in Rouen. It is to follow his company, originating from the Seine-Maritimethat Paul-Arthur Berlan, 40, has taken up residence in the Normandy capital.
He fell into the pot as a child, thanks to his “native grandmother from Spain, who cooked a lot”, but also by his parents who ran a restaurant in Carcassonne. “I was 10-12 years old, I liked this energy, of going to get products on the right, on the left, this activity…”

Trained with Frank Putelat“my dad in the business”, Paul-Arthur Berlan is spotted everywhere he goes and each time he is offered new challenges: helping the second star of Michel Sarranopen up to the world by cooking in Norway with the “Bocuse de la Scandinavia”, then sent “on coal” to the Meurice a Pariswho wanted to conquer a new star.
The taste for surpassing pushes him to invest competitions, to the point of acquiring the nickname of “the machine”, passing by the Top Chef box where he will go to the semi-finals.
Simply cooked local produce
“But I always had this dream of opening my restaurant,” he explains. Done with the Metropolitan then Escudela, in Paris. And now Paul-Arthur, in Rouen.
Here it promises to work local products “while putting a little touch of the Southwest, with for example a Norman bouillabaisse. We also honor the Norman hole”. And the chef is also ready to try his hand at the famous Rouen duck. All in a spirit of simplicity.
We can say that I am on a classic cuisine but brought up to date. We are not looking for a star, we are looking for pleasure. We are on bistronomy, beautiful products cooked simply.
From 16 euro
At noon, the dish of the day is at 16 eurosthe formulas at 21 and 26 euros. In the evening, you will find a menu at 35 euros. “But we will also have a six-course tasting menu, to discover a lot of things. »
The restaurant, formerly the Garde-Manger, next to Bourgtheroulde hotel, has around sixty seats inside and around twenty on the terraces. “The location is ideal. I hope that the public will be there, ”smiles Paul-Arthur Berlan, looking at the pretty Place de la Pucelle. The opening is planned for the week of January 16, 2023.
