A young chef who has passed through the best tables
Justin Berment26 years old, has been passionate about cooking since childhood, in Bourg-Achard (Eure) where he grew up. What could be more normal with a market gardening father and a mother who cooks very well. “My mom is from Carcassonne. At home, it was the fight between cooking with olive oil and butter! “, he recalls.
He also remembers his culinary experiences, as a child, “not always a success”. But Justin trained, in a professional kitchen baccalaureate from the age of 16, and by working for big names: the Origin, the Odas, then Cancan and the 6th Sense.
“For me, it was the logical next step to settle down and open my restaurant,” says the chef. “I learned a lot and now I want to offer my cuisine. »
A kitchen based on simple products where vegetables take pride of place (a legacy from his market gardener father). “I want to show that the vegetable is not just an accompaniment, it is there to enhance the dish. For example, you can cook a cauliflower with gravy and the two complement each other perfectly. » And the products will be seasonal and preferably local. “We win in price, but above all in quality. »
An incentive to discover
Justin Berment also wants to encourage discovery, hence a unique menu. “So far, we have had only good feedback”, rejoices Olivia Nicolhis company that runs the service.
If you don’t like the celery or the better, à la carte of the moment, you could rediscover them in carpaccio, with hazelnuts and vinaigrette for the first, with wasabi and citrus fruits for the second. Also on the menu, scallops, beef and of course dessertsprepared by the pastry chef who was already officiating at the street lamp.
