With MonChef, Thibault Barbafieri opens his “black kitchen” in Marseille
A bistronomic cuisine based on fresh products, mainly local and from sustainable or organic farming, is the choice of chef Thibault Barafieri. But unlike a classic restaurant, the former Top Chef 2018 candidate, also trained, among other places, at Villa Madie in Cassis, chose to open, with his partner and childhood friend Laurent Burchi, a “dark kitchen”: a kitchen certainly but without room, nor tables for a qualitative ready-to-eat to take away or to deliver, midday and evening.
Supported by Damien Brunehault and Christopher Cenatiempo, respectively a young chef and a young second in the kitchen already experienced, one specialist in lobster and the other in Italian cuisine, Thibault Barafieri specifies his choice: “We have all worked in starred restaurants and there, we erase the complicated points to manage to focus on the kitchen. We also want to make this kitchen accessible and thus, in 20 minutes, it is delivered to your home”. And for the customer, there is no longer any need to go out to taste homemade pasta with truffles, a smoked burrata with grilled leeks and pesto, homemade gnocchi with gorgonzola and hazelnuts or a chocolate mousse without sugar. It should be noted that truffle lovers will find in Thibault Barbafieri the perfect accomplice since he himself went to dissuade some of them to carefully select his suppliers. “Leaving like this with the dog and finding some, it was a great pleasurehe remembers. And our recipes will follow the seasons: winter truffle, summer truffle and autumn truffle ».
Indeed, imagined around three themes – Italy, truffles and “Healthy” -, the recipes of “ My boss » Discover a subtle blend of flavors and textures and a touch of surprise… by offering a few discoveries such as a lobster and mint ginger yogurt sandwich (€21) or a chocolate and truffle mousse (€5). The sea bass ceviche is available as a dish accompanied by mashed sweet potato (€19), or with truffles and mashed potatoes in PDO olive oil (€22) , but also as a Calabrian starter with capers and candied lemon. Each hot or cold dish is delivered in specially designed packaging and accompanied by an instruction sheet to optimize tasting.
