Gault and Millau Guide 2023. Two restaurants in the Toulouse agglomeration obtain exceptional scores

Thursday, December 1, the Gault et Millau guide appeared and gave its verdict of the “best” restaurants in France. 2,300 tested addresses have been tested, selected and scored by the investigators of the guide.
“Sublime rusticity” at Sarran
Two restaurants in the Toulouse conurbation are particularly successful and obtain exceptional marks.
With 17.5/20, Michel Sarran is the highest rated restaurant in Haute-Garonne.
For the guide, “Michel Sarran 2022 is an excellent vintage”.
This year, we found on the plate what we had very slightly lacked last year, this clever amalgamation of sophisticated peasantry and princely sophistication, this sublime rusticity that one encounters in the best
Asparagus, turbot and “superb lamb”
The guide obviously particularly enjoyed his meal:
“The spring version of green asparagus, pumpkin seeds and buckwheat, with this scoop of house beer asparagus granny bufala foam, haughty turbot mixed with a ginger corn cream and zucchini flower in a mischievous garbure in the blink of an eye bearnais eye bring the farmer spirit of the Gers cook back to the center of the village. You can then enjoy a little nobility, langoustines in two services, tortellini claws, lacquered grilled sweet potato, bisque and also raw, marinated in argan oil in an artichoke and caviar royale from Aquitaine, and superb three-course lamb, including an amazing tartare placed on Toulouse brick, with Asian flavors and a shoulder croquette confit with dates. Among the beautiful desserts, candied rhubarb with rhododendron honey and, always, the apple crisp flambéed with Armagnac in tribute to his mother Pierrette”.
The guide mentions a “tonic and precise service” and a new sommelier, “who knows how to twirl in the rich southern cellar, particularly equipped in Languedoc”.
“Well-being at the table” by En Marge
To the south-east of the conurbation, chef Franck Renimel received the magnificent score of 16/20 for his restaurant En Marge.
The guide is also very complimentary:
The art of hospitality, well-being at the table, rigor in the choice and treatment of products, these are some of the lasting values maintained by the chef and his wife in this splendid interior opening onto the hills of Lauragais a quarter of time of the Occitan capital.
“A good menu” at 41 euros
The “good menu of the day at 41 euros” convinced the tester of the guide. He explains :
“While he has kept his famous truffle and foie gras cappuccino on the menu, just like the indestructible cassoulet, the chef is always looking for and developing new winning combinations, such as langoustines and pumpkin, or sweetbreads with grapes and potatoes. Good seasonal desserts (Mirabelle plum and violet yoghurt, chocolate and blackberry…)”.
Toulouse is a hit in the rankings
A few days ago, two restaurants in Toulouse had already distinguished themselves in another ranking, that of La Liste, which lists the 1000 best tables in the world.
And it was already Michel Sarran who was among the two lucky winners, accompanied this time by Pierre Lambinon, the leader of the PY-R;
