Near Toulouse. Peaceful place and tasty dishes: gourmets love this new vegetarian restaurant

It is an enclave of tranquility in the heart of Balma, near Toulouse, and an ode to well-being that Marie opened last June.
The restaurant Libère Mets Sens is a place to discover for itself, but also for the cuisine that chef Gilles offers there.
A discreet entrance
Let’s start with the place: a discreet entrance, a small sign to indicate that we have arrived. The inner courtyard brings us back at the Balma that the inhabitants could know in the 70s.
The place where the restaurant opened was the presbytery of the town at the end of the 19th century.e century then housed a grocery store. Marie who, before embarking on this restaurant adventure, worked in real estate had fallen in love with the place:
“I wanted to create a place of sharing and I regularly passed in front of the closed shutters of this building…”.
A dream come true
The dream came true in early 2022 when Marie acquired the house. She found Gilles, the chef, whom she had as a client at the real estate agency and with whom she decided to embark on the adventure.
After rolling around in Paris, Brussels, Los Angeles, after working in starred restaurants, Gilles offers tasty vegetarian dishes here. Homemade that makes you want to testify to the many photos of dishes shared on social networks.
Internet users acclaim it
And Internet users appreciate: the restaurant “Libère Mets sens” is worth the detour according to them.
The good comments indeed flourish on the web: “Super setting, very good and hearty vegetarian cuisine”, “For a timeless amount, in a bucolic and romantic setting”, “Very tasty homemade vegetarian cuisine”, “Barely passed the door, it feels good”…
“In a pleasant and relaxing setting, the catering part is of very good quality and plentiful. The service is very caring”, sums up Vincent.
“We don’t leave our homes with hunger in our stomachs”
Curry squash velouté, Provencal chard carrot pie gratin, brandade of root vegetables and potato chips, apple crumble and homemade fruit, these are, among other things, what the restaurant’s customers were able to eat this week.
A menu that changes regularly.
“What we want to convey is a feeling of well-being both through the setting and the dishes we offer. We wanted to create an authentic place imbued with simplicity and human refinement. In the plates, we offered balanced plates, with a good quality-price ratio, hearty with seasonal products having good taste. It’s a vegetarian restaurant, but you don’t leave home hungry,” explains Mari.
Libère Mets Sens is also a tea room which opens at 8am. The establishment is open every day of the week, from 8 a.m. to 6 p.m. It is closed on weekends.
