Toulouse: two oenologists open an establishment for beer lovers and wine lovers

This is one of the new addresses of the back to school a Toulouse. From September 1, 2022, Toulouse residents will be able to discover Locala news mini brewery (brewery) located Avenue Paul Sejournein the neighborhood of Starch.
At first, the couple behind the project will take place at the opening of the game bistro before developing its own beers on site, in a few weeks.

Trained oenologists, Renaud and Camille met through their passion: wine. Today, they are embarking on a new adventure for “the love of the products, the region and the public”.
That’s why they decided to open their own business with Le Local. “Local products served by enthusiasts,” enthuses Camille Rossignol. Plates will also be prepared “with products grown and/or raised in the region, purchased directly from producers. Simple and gourmet dishes! »
The passion for wine
Despite a project essentially focused on beer, Camille and Renaud want to share their passion for wine and their experience of the wine world within their establishment. “Le Local is a place where you can discover wine estates offering a wide range of wines to please all tastes. You can also come and taste fruit juices from the region and also cider! »
A place of meeting and exchange
By opening this new establishment, the couple intends to give free rein to their creativity with the production of their own beers. “We really want to offer a place of meeting and exchange”, adds the one who is known for great experiences in the wine world.
After a month of work, Renaud and Camille are finally ready to welcome beer and wine lovers. “We are going to offer beers from microbreweries in the region and wines selected by us and directly with the winegrowers”, specifies the oenologist.
“Le Local lets you discover original beer profiles, varied according to the seasons and tastes: from IPA to Stout via Sour. Each month, different types of beer from microbrewers will be offered. »
Patience for the mini-brewery
After a month of work, the Toulouse couple are ready to open the bar part of their project. For the mini-brewery, we will have to wait a little longer.
“With inflation, prices have literally exploded lately, saddens Camille Rossignol. Renaud went to the north of France to find the best compromise. For the moment, we are patient… But I think we will be able to brew our own beer in a few months! »
The ambition for the couple is to produce their own beer on site using small-volume brewing equipment. The beers will then be transferred to tanks which will directly supply the barrels of the bistro part.
