Toulouse. The Bistrot des Halles has had a facelift
Located opposite the Saint-Cyprien covered market for many years, the Bistrot des Halles reopened its doors on July 5 after 6 months of work. New decoration, new staff and change of hands for this establishment which now belongs to Nicolas and Marie Martinez as well as to Cyril Gardot, already owners of the La Concorde and Échanson cafés in Toulouse. A reopening in the greatest discretion in the middle of the summer, not necessarily the most favorable to start such a business, but with a dynamic and motivated team which will eventually have 8 to 9 people in the dining room and 3 to 4 in the kitchen. Brand new premises consisting of two spacious rooms open on either side of a long counter, to which is added a very large terrace which extends in the evening on the market side to accommodate a total of 70 to 80 seats.
They work with market traders
The offer of the Bistrot des Halles is currently limited to tapas in the evening, from the start of the school year with the chef’s return from vacation, it offers à la carte meals at very affordable prices. “We will work as much as possible with market traders, for fruit and vegetables for example, but also with the very famous horse butcher’s shop in the hall, to try to bring horse meat up to date,” says Hugo Pelfort, director. of the establishment. “We have two months to prepare for this start of the school year, our goal being to make people feel at home here,” he adds. And there is no doubt that this is the case since many local regulars have already reinvested in the place.
