Toulouse: An exceptional meat box opens this Monday at the station market
Nordine Sebti inaugurates this Monday at MIN Occitanie-Toulouse, the Wagyu lodge dedicated to this exceptional beef.
This Monday, Nordine Sebti will be particularly happy. He opened his Wagyu beef lodge (beef in Japanese) at the MIN Toulouse Occitanie. To get there, this Toulousain lived a rather unprecedented story. After fifteen years as a sales technician in Alsace and nine years as a mechanical fitter in aeronautics at Airbus, he completely changed paths five years ago: “Grandson of a farmer, I like tasty meat. I struggled to find this quality. So I decided to get into this business.”
“Animals raised with very strict specifications”
He therefore began to research to find very good French meat, produced with respect for the animal: “In 2016, I discovered Kobe beef (Japan), one of the most famous meats in the world, in particular for its intramuscular fat, ideal for health because it is low in cholesterol, and its unequaled taste of melting candy”. By talking with a Japanese breeder, Nordine learns that this meat is very little imported into Europe. “Only 2% of the Kobe beef herd leaves the country, particularly in Australia and the United States, specifies Nordine. By chance, a French breeder in Aisne had brought a pure strain of this beef from Australia, brought back by a Japanese veterinarian. After meeting him, I asked him to associate me with his breeding and his Wagyu France brand, for a year. After several exchanges and private visits to the estate, he accepted my proposal in 2019 and asked me to prove myself”. Animals raised with very precise specifications: “As in Japan, these oxen are fed organic hay, listen to music and are regularly massaged”.
Since then, Nordine has marketed this beef to several butchers in Paris and Ile de France. Its goal is to cover all the butchers and restaurants in France. To do things perfectly, Nordine also passed during the covid, a CAP butchery. He is now the first French producer to offer this unique purebred Japanese breed in France.
