After doing his ranges at Chez Huguette, a beautiful house located at 81, rue de Seine in Paris, Adrien Flottes took the reins of Le Tournon, a “chic brasserie” located a stone’s throw from the Luxembourg Palace. The beginning of a new adventure for the young man of 25 who thus perpetuates the family heritage. meet.
Damn, they say, can’t lie. Son and great-grandson of restaurateurs, Adrien Flottes, 25, is in the process of carrying out his “kid’s dream.” With his father, Olivier, a well-known professional in Paris, he will open “soon” Le Tournon, a gourmet address located a stone’s throw from the Senate, at 18 of the street of the same name.
A”nice challenge“and a logical continuation in the career of the young man”fell into the pot as a child”. “I saw my father quite rarely in truth. He always left very early in the morning. But when I managed to get up before him, I was waiting outside the door to go work with him! That’s what I asked him anyway.” remembers Adrian.
He readily admits it, he doesn’t see himself doing anything other than working in the restaurant business. “Initially, I wanted to orient myself more towards the kitchen. Becoming a cook amused me a lot. But I finally chose the room. I like the contact with the customers.”
Parachuted into a hotel school right after college, Adrien learns. “The hard way” now recognizes the young man. “I did my first indoor internship, at the Cristal Room Baccarat, a semi-gourmet restaurant. A pretty strict house, at least very strict for the 16-year-old little guy that I was. It was downright hard. Especially since the kitchen team did not spare me. But I gritted my teeth. I was determined, I liked it!”
Validated training, he ensures with his father the opening of Chez Huguette, a new business introduced in the 6th arrondissement of Paris by Olivier, after 27 years at the head of the famous Chez Flottes, at 2 rue Cambon, sold to a trio from Aveyronnais composed of Jean-Marc Calvet, Christian Valat and Sébastien Bras.
“Huguette is my grandmother’s name”, specifies Adrien who has an unfailing admiration for him. “It’s with my father, my two great models. My grandmother was the first to embark on the adventure of restoration. And like those of her generation, she did not count her hours. She worked until ‘at ‘at 76… Honestly, I’m not allowed to say I’m tired’, Adrian is having fun.
“Classy Brasserie”
Now at the helm of the Tournon, the opening of which is announced in the coming weeks, the new Fleet generation has some good arguments to put forward. And he intends to make it known, both the result “lives up to expectations.”
“We wanted to recreate a warm, enveloping place, in the chic brasserie style with aged mirrors, duck blue velvet banquettes, black marble bar.” All the markers are there. On the kitchen side, it will also be a question of distributing: “the house brand”. “We don’t redo ourselves, I love gourmet, comforting cuisine. I hate cuisine where there is nothing on the plate, Adrian defends himself. You need to be greedy, it is very important to me.” Let it be said: a stone’s throw from the Luxembourg Palace, Le Tournon intends to impose its law.
