Pavyllon, the new Monaco restaurant by Yannick Alléno
The three-starred chef has exported his Parisian establishment to the Hôtel Hermitage.

Our opinion
At Pavyllon, conviviality is at the rendezvous both by the layout of the room and by the content of the plate. From the counter, you can watch the preparation of the dishes, served with warmth and professionalism.
In front of us, fresh and original dishes, where we combine surprising and daring flavors: red mullet roasted in crispy courgette leaves, tomato fondue with mango and saffron; bass and beef, caviar and crispy condiments; mesclun à la Monte-Carlo with vegetables from the garden, sheet by sheet Wagyu beef with Paris mushrooms, fondant chocolate tart or the “badaboum” egg with poached caviar.
