Vanilla and Chocolate Easter Bunny Surprise Cake

The recipe for the vanilla and chocolate Easter bunny surprise cake
Ingredients :
Pour 1 cake
Pour the mascarpone cake
- 150g caster sugar
- 150g flour
- 100g cornstarch
- 5 cl of oil
- 1.5 packets of baking powder
- 2 packets of vanilla sugar
- 1 teaspoon liquid vanilla extract
- 3 eggs
- 200g mascarpone
For the chocolate bunny insert
- 150g pastry chocolate
- 100g caster sugar
- 60g flour
- 0.5 sachet of yeast
- 80g butter
- 3 eggs
- 50 g ground almonds
Preparation
Start by preheating your oven to 180 degrees.
Preparation of the chocolate sponge cake
Then, cut the chocolate into pieces and melt it in a bain-marie.
Meanwhile, in a bowl, beat the eggs with the sugar until the mixture whitens. You can do it with an electric battery, a robot or even by hand.
Add the flour, baking powder, melted butter, ground almonds, and chocolate and mix again.
Cover a baking tray with parchment paper and roll out the chocolate batter to a thickness of 1 to 2 cm. Bake for 15 mins.
Leave the oven on at the end of cooking to cook the mascarpone cake.
Once it is cooked, let the sponge cake rest then cut it using a rabbit cookie cutter as many pieces as possible.
Arrange each piece of sponge cake one behind the other to form a tube the length of the cake tin used for the mascarpone cake.
Wrap the tube of sponge cake in cling film and set aside in the freezer.
Preparation of the mascarpone cake.
Whisk the eggs, sugar and vanilla sugar, continue beating and incorporate the mascarpone, oil, flour, baking powder and add the lemon essential oil last.
Now you can pour the batter into a large cake pan putting just half in then arrange the chocolate insert and cover with the mascarpone batter. Bake for 45 mins.
Once out of the oven, wait 5 minutes before unmolding the cake.
