Donato Perrone, a hotel teacher, cannot teach for reasons that he is not vaccinated for health: so he prepares sweets, croissants and biscuits for funds for refugees
Rustic cakes, sweets and brioches destined for the school bar, but also wine donuts to raise funds for Ukraine. From Monday preparing them will be the new job of the professor and pastry chef Donato Perrone, not vaccinated, who returned to school after the end of the state of emergency, but not in class. So I make myself useful, says the teacher, 49 years old, in the role of the Amerigo Vespucci hotel school in Casal Bruciato. The project born from the intuition of the president Maria Teresa Korea, was renamed to include in order not to succeed. The advantages are on several fronts – explains the manager – The teacher will have his own assignment and will not be isolated, the bar will no longer buy from external suppliers, but from the school, which will thus amortize costs. In addition, we will help a country in difficulty. In the room adjacent to the kitchen-laboratory you can hear the sautéing of students in class. As in the restaurants, a small window joins the two rooms, but this time it will remain closed. I can only use the stove when the kids are not around, explains the pastry chef as he dishes in the empty room. Professor Perrone struggling with the general tests: we are choosing above all the ingredients, the flours to be used. In front of it, as it has still warm croissants and rustics made with unused products from the institute’s pantry: With this project we will also reduce waste.
Due to health problems, the professor decided not to get vaccinated. The doctors I asked for an opinion gave me different answers and no one was able to reassure me – explains the pastry chef teacher -. I was suspended when I was still sick and found it unfair. Because of what I had, I haven’t been in class for fourteen months, I couldn’t wait to go back to school, I miss my students Perrone’s class was entrusted to the former student and now professor, Luca Vissani, 36 years old . At the end of March the two teachers collaborated in the creation of cookies for the fundraising in Ukraine. Remotely, the unvaccinated pastry chef followed the production by dispensing advice. In a few days – says Vissani – the students produced 3500 wine donuts, packed 700 packages and collected 1400 euros with these. We bought medicines and baby products there which were delivered to the Greek Orthodox Church of Hagia Sophia.
To pack the five biscuits with the school crest and the yellow-blue ribbons, says the former student of Perrone, there was also a disabled boy of Ukrainian origin. The donuts went like hot cakes – says Vissani as he scrolls through the photos of the boys at work -, we have also received orders from families and associations in the neighborhood. The students also programmed a Qrcode with the recipe translated into several languages. Now the production will pass to Professor Perrone.
