It’s official, the Confrérie du Cassoulet de Toulouse is received!
No offense to some, cassoulet is also from Toulouse. It is to promote this traditional dish which will be transmitted this Thursday, April 7 to the Confrérie du cassoulet of Toulouse at the restaurant Chez Mustache in Beauzelle. A Congregation with its own identity, whose objective is not to compete with the Great Brotherhood of Castelnaudary cassoulet.
We decided to create the Confrérie de Toulouse quite simply because it did not exist and we wanted to have the Toulouse cassoulet, which has its own specificities. There is no question of going to war with Castelnaudary, there will be no cassoulet festival like there, everyone has their own cassoulet”, explains Guy Pressenda, president of the Confrérie du Toulouse cassoulet.
Toulouse cassoulet recipe unveiled
And to justify his attachment to the Toulouse cassoulet recipe, the circle quotes the adage of the great chef Prosper Montagné. “He said of this legendary Occitan dish that Castelnaudary is the father, Carcassonne the son and Toulouse the Holy Spirit”, specifies Guy Pressenda, having himself been inducted into the cassoulet brotherhood of castelnaudary. A variant that stands out from its Aude cousins: exit the tomato paste, lamb and breadcrumbs, this cassoulet recipe gives pride of place to local products.
In Toulouse, we cook ingot beans from Lauragais, duck confit, of course, real Toulouse sausagepork from the South-West and fat bacon”, lists the one who is also president of the gourmet festival ‘Toulouse à table’.
The objective of the community, already made up of 40 people, is to democratize the dish within establishments in Toulouse.
In Marseille, all the restaurants make bouillabaisse, in Strasbourg they all make sauerkraut, but in Toulouse not everyone makes cassoulet, you have to look for it. We would like more restaurants to offer it.”
A joint brotherhood
A dynamic in which the two great masters, already appointed: André Audouy, alias “Moustache”, and Sophie Conquet, works manager of the Toulouse hotel school, will participate. Two personalities chosen to illustrate the brotherhood’s desire for parity.
Who says brotherhood says costumes. Outfits that will be less folkloric than those of their Chaurian counterparts: a brown horse-dealer’s blouse, a white harness bearing the crest of the congregation and berets. Headgear will be black for men and red for women. “A nod to our famous Toulouse stadium“, specifies the president.
The event will therefore be held this Thursday, April 7 and will end with a cassoulet… from Toulouse, of course!
