The Nobu at the Fairmont Monte-Carlo offers, as we know, a gustatory escape to Japanese cuisine revisited in Peruvian style by Nobuyuki Matsuhisa. Jérôme Lorvellec, present from the opening and arrived from Nobu in Perth (Australia), is from the Alpes-de-Haute-Provence, a way for him to return to the country. This good technician, sure of his basics, had been, from 2001 to 2003, second in the kitchen at Nobu Paris and had even created in 2002 the dessert menu and its implementation at Nobu Milan. Chef of the Pershing-Hall hotel, then of the 40 BC Forty Black Calavados restaurant in Paris near the Champs-Elysées, he was then sous-chef of the Nobu Atlantis the Palm in Dubai, then executive chef of the Matsuhisa restaurant, Astir Palace in Athens , before landing in Perth at Nobu at Crown Casino Australia.
In the Principality of Monaco, every evening, from 6 p.m. to 11 p.m., magic happens under his guidance. In a “lounge” atmosphere of good quality, the dishes follow one another serenely with a detailed explanation of each service by an attentive and discreet staff that manages with dexterity Nicolas Maréchal and his accomplice Alexandre Ripochaud. Among the nuggets drawn from a menu rich in gourmet suggestions, we will remember the sea bass sushi and miso powder, the amberjack sashimi with jalapeno pepper or the tiradito scallops.
But the new style ama-ebi shrimp, gyoza (crispy and tender Japanese dumplings of wagyu beef, one of the most tender meats in the world), ponzu sauce are also king pieces. You can also taste the wagyu in sushi, accompanied by sea urchin sashimi: a real killer! There is also king crab in tempura, amazu ponzu sauce, toothfish (carnivorous fish from southern waters) steamed and miso powder and as a dessert of choice, a very appetizing sweetness of exotic fruit with yuzu emulsion which concludes marvelously high-flying feasts.
Added to this is a world wine list with quality choices by the glass (Marlborough Sauvignon Blanc from New Zealand, Argentinian red Malbec from Mendoza) and some great sakes to offer. Long live Nobu in Monaco!
