Michelin-starred chef Yannick Alléno will open his “Pavyllon” on April 15 in Monaco
“Ithere is a real place in the Principality for this cuisine tinged with azure in a chic and relaxed atmosphere and I would like Monegasques to make this restaurant their own” promises Yannick Alléno in the press release accompanying the announcement of the upcoming opening of his Pavyllon within the walls of the Hermitage hotel. For the time being, work is being completed on the dining room and kitchen side. Two spaces that will mingle around a counter that will give a whole new configuration to the old Vistamar.
This is the Pavyllon spirit, a “counter gastronomy”, a concept proven since 2019 by the two-three-star chef in Paris and which he exports to the Principality. His warm-up lap last season, launched a few days before the Grand Prix, was the gastronomic surprise that Monaco was waiting for. For his final installation in the Principality, from April 15, Yannick Alléno will be transformed into his environment and promises “Tasty and refined cuisine” in an elegant setting around the signature counter which will be able to accommodate around thirty guests who will follow the preparation of the dishes.
The setting signed by Chahan Minassian, who decorated the Hôtel Crillon, imagined a metallic wood counter opening onto a kitchen with geometric tiling. A space to discover in a few days…
