Discover Pavyllon, Yannick Alléno’s restaurant soon in the Principality
The prestigious establishment will open its doors on April 15.
It is in the refined setting of the Hôtel Hermitage that Pavyllon, the restaurant-counter of three-starred chef Yannick Alléno, will set up shop in mid-April. Created in 2019 in Paris, this establishment offers tasty and refined cuisine, in the modern and relaxed setting imagined by the interior designer Chahan Minassian and on the green terrace.
In addition to the traditional tables, which will take place facing the sea, customers could also treat themselves around a gourmet counter, facing the open kitchen.
On the plates, local products cooked with imagination: prawns from San Remo in a beautiful “cocktail” view, surprise egg with Prunier caviar grains, poached, cold smoked cream and golden croutons, steamed morels on a royal duck foie gras, mesclun à la Monte-Carlo with vegetables from the garden seasoned with a pistachio sauce or even vegetable ravioli in spring broth pearled with olive oil.
And for dessert, exit the sugar! The chef has replaced it with birch water, to offer light and gourmet recipes, such as ice cream textured with a fork and whipped at the table, puffed meringue with vanilla “caviar” or crispy frozen feuillantine with wild strawberries.
” I am very happy to open the Pavyllon at the Hôtel Hermitage Monte-Carlo. There is a real place in the Principality for this cuisine tinged with the Azur in a chic and relaxed atmosphere and I would like Monegasques to make this restaurant their own », declared Yannick Alléno, who had already settled in Monaco a year ago.
