Cookies made with white beans win Nutri-Score A
What if we could have a snack, without feeling guilty? This challenge, three graduates of the school of agricultural engineers of Purpan, in Toulouse, took up by planning the first cookies with a Nutri-Score A indicator and which will soon be distributed in traditional shelves. To imagine creating a biscuit that is both good and crunchy, they used an ingredient that is surprising to say the least, which is more often found in savory than sweet groceries: white beans, from the French sector.
100% plant-based
“It has the advantage of adjusting the texture and replacing the technical properties of butter. It also lightens the sensation in the mouth, without impacting the taste. Our cookies are 100% plant-based,” says Robin Castello, one of the co-founders of the Mioum branda fan of snacks like his two acolytes Guillaume and Cédric.
There is no question for them of sacrificing taste and pleasure for a balanced diet either. There is therefore a lot of sugar, from the beet industry, and fat, in particular thanks to the almond puree. This keeps the crispy side that we love so much in cookies.
Products that come in blueberry-almond or cranberry-macadamia versions, without preservatives. They are made in Toulouse and will be available in the supermarkets of the metropolis or for direct sale on the site of the young company. The entrepreneurs, who have taken up residence in the Grand Marché Food Incubator, north of the Pink City, have launched a campaign to crowdfunding on the Miimosa platform to create their eco-responsible packaging, made of 72% paper and therefore recyclable.
