Flo’s inspired cuisine in a lovely setting
After working his culinary skills for a long time in some fine brands in the region and abroad, Florent de Brunelys recently opened the restaurant Flo’s, at 9 place Saint-Pons.
It is accessed by a courtyard, formerly the passage of the archbishop to go to the cloister. A courtyard behind its old walls, sheltered from view, from the wind and even from the sun thanks to the natural shade of the two-hundred-year-old yew. A courtyard which, on fine days, can accommodate up to thirty guests. It is crossed by a stone path in Japanese steps which leads to a lovely pergola opening onto a small vaulted room with twenty seats.
The contemporary and artistic decoration harmonizes perfectly with this heritage building. Florent spent a “pagnolesque childhood” in the mountain of Frigolet, which no doubt explains why today he is a supporter of authenticity and good taste. With his hotel and catering BTS in hand, he went to work in Mauritius, in the United States, where he learned the basics of “good old French cuisine”with the Disciples d’Escoffier, with Pierre Chambrin, former head of the White House.
Returning to France, the young chef joined the Pourcel Brothers group, “geniuses !”, he says. From 2010 to 2014, he directed 83 Vernet in Avignon. In 2015, commissioned by Maison Blachère, he created a fast and gourmet restaurant concept in New York. “I was ready to create my own business, says Florent. The health crisis gave me time to refine my project. I wanted an osmosis of all my experiences, a traditional cuisine augmented by multiple inspirations”. What we make the mouth water!
