Toulouse. An ecological restaurant… but gourmet
L’A/G, or l’Assemblée Gourmande, is the name of the new eco-responsible and gourmet Toulouse restaurant that will soon open its doors in the Bordelongue business area. In the adventure, two young Bretons: Agathe Felut, restaurateur graduated from ISTHIA in Toulouse, and her brother Guénolé, a baker and pastry chef fresh from his native Quimper. Both gathered to share with us their passion and their values. “We grew up in an environment of bon vivants and in the culture of eating well” confides Agathe, who realizes her ambition to settle before she is 25 years old. The concept of the A/G is based on local supply in short circuit, organic or in reasoned seasonal agriculture. Then, everything is homemade, from the appetizer to the sweets and of course the bread that Guénolé will adapt according to the menu in a food/bread/wine pairing. And their eco-responsible approach does not stop there. For take-out, no plastic but returnable or reusable glass containers, as well as bio-waste recovered to be transformed into energy. Their objective is to obtain the Ecotable label, which takes into account multiple criteria, from the choice of products to personnel management, including the energy used, etc. Our two young entrepreneurs who have just launched their crowdfunding campaign with the company Miimosa, are also registered in the “Les Cuistos Engagés” competition intended to encourage and support virtuous environmental practices. L’A/G, a midday restaurant which also offers afterwork and private parties.
