Established for 30 years in Toulouse, La Gourmandine will open a second restaurant

In 2022, la Gourmandine will see the big picture. The restaurant, which will celebrate its 30e year of establishment in Toulouse in April, will open, during the first fortnight of January, a new establishment, rue de Metz, in place of the old restaurant The Grilled.
A bistro version
Homemade foie gras, smoked Pyrenean trout, Aubrac beef tataki style, lemon tart … the Gourmandine has become an essential address in the Victor-Hugo district, for several years now.
In a few weeks, she will soon have a little sister. Indeed, Yoann and Jérémie Cortes, associated with the head of Gourmandine, will open a second enclosure, bistro version, rue de Metz.
We had the opportunity to buy this old business in Toulouse, which was La Grillée. We keep our way of doing things: cooking with short-circuit products, a lot of things sourced in the region. On the kitchen almost exclusively fresh products. But there, on will be on a bistro version.
The strategy will be slightly different. “We are on a kitchen that we want a little simpler, which is in tune with the times. That’s why we’re going for a slightly more bistro version, explains Yoann Cortes. But that doesn’t change the quality some products. “
“It’s a different neighborhood”
The Cortes brothers have therefore set their sights on a business located rue de Metz. ” It’s a different neighborhood. We find that it is quite residential, compared to what we can know in Victor-Hugo, where we have a lot of shops, offices, hotels… ”
In a few words, Yoann Cortes sums up this challenge by explaining that “our project on rue de Metz, we can see it a bit. like the Parisian brasserie, on the bright side ”.
A lot of work is going to happen on rue de Metz, there is a whole beautiful project happening. This is kind of what guided us in this case. La Gourmandine à Victor-Hugo will be renamed “Côté Marché”, and the one located in rue de Metz “Côté Cathédrale”.
If the Gourmandine staff currently varies between 16 and 20 people, 10 will be needed to keep the new version. “It’s a nice project because we are going associate employees who have been with us for a while »Savors Yoann Cortés.
Early 2022 in sight
For the time being, no precise date has been revealed concerning the opening of the restaurant. “We are in the middle of the work. Things are not going too badly, but with the materials, the delivery times … Everyone takes a grain of salt »Explains the manager.
“For now, we say to ourselves first fortnight from 2022. The sooner the better from January 1, ”says Yoann Cortes.
It is a step forward for us, we had not diversified too much. We mastered well at home, but we wanted a little more. It is both a family and intimate project with people who have been with us for a while in our restaurant.
In the timetable department, the Cortes brothers are working, for the moment, on a layer of the system in place in Victor-Hugo, namely an opening of the Tuesday to Saturday, noon and night.
“As we are on a bistro version, we do not rule out opening 7 days a week, warns Yoann Cortes. But it’s not in the pipes for now. »In all, the establishment is 145 m². There will be 60 seats inside, and 35 outside.
