3,000 dumplings from Rauris for the Oktoberfest

At the Oktoberfest in Munich, numerous Salzburg residents are again working as musicians and in gastronomy. But not only that – a toque chef from Rauris (Pinzgau) produces a total of 3,000 spinach dumplings for the Wiesn.
More than 3,000 dumplings will be made in Rauris until the start of the Wiesn on September 17th and then personally delivered by the Langreiter family to the largest folk festival in the world. Award-winning chef Gregor Langreiter worked for decades as a chef at the Munich Oktoberfest – until he got the offer to produce spinach dumplings himself for the big folk festival. 20 years later he still delivers his Rauris specialty to the Oktoberfest.
Award-winning chef: “Turning dumplings is like meditating”
In the weeks leading up to the Oktoberfest, young and old help out in the Langreiter family with rolling the dumplings, and each individual has their own rituals. For the Rauris toque-awarded chef, rolling the dumplings is like a meditation unit – loud music is forbidden in the kitchen here: “When I’m present, there tends not to be any music. But I know that when I’m not in the kitchen, the boys turn up the music loudly – but that’s a good thing,” says Gregor Langreiter with a smile.
Recipe is a matter of feeling
The dumplings are made from Austrian products – each piece may not weigh more, but also not less than 90 grams. Asking about the recipe hardly elicits more than a smile from the chef – it remains a secret, so to speak: “It’s a matter of feeling, a secret would be exaggerated. A general recipe is difficult because it always depends on the dumpling bread. The drier the dumpling bread is, the less milk you need,” reveals the dumpling producer.
For award-winning chef Langreiter, it is still something special to have been producing a product for the Munich Oktoberfest for 20 years. “The whole world knows the festival and if there is a product from Rauris, then that’s something nice,” says the restaurateur happily.
