For many years, SalzburgerLand has been characterized by its unsurpassed diverse range of culinary delights: With the coveted Via Culinaria – pleasure trails in SalzburgerLand, the high density of award-winning chefs, committed producers and considerable pleasure craftsmen as well as organic farming that is exemplary in Europe, the state is considered a true gourmet and gourmet destination. From the summer of 2022, inspiring pleasure trips under the motto “taste and discover the SalzburgerLand” invite guests to set off and explore the best addresses in the style of Alpine cuisine in the city and state of Salzburg: either within a holiday region as a bookable pleasure tour or – to be experienced individually – across the SalzburgerLand.
What does the SalzburgerLand taste like? After smoked char in the Salzkammergut, after spicy herb cheese and earthy potatoes in the mountain regions and after sweet Salzburg dumplings in the city of Salzburg. The country’s cuisine is as diverse as its landscape. The crystal-clear water in lakes and streams, the forests, pastures and mountains have always had an influence on products and handicrafts. Above all, the altitude and the seasons characterize the dishes that are served: Plums, for example, grow in abundance in the Salzburg Lake District, but are rarely found in the Innergebirge. The elder thrives in the Salzkammergut on the alpine pastures, in the national park region, however, only in the valley. Even if dishes are similar, ingredients and methods of preparation often vary from valley to valley. That may come as a surprise, but it has a lot to do with geography – especially with the mountains – and with traditions. Much of what is still current and influential in Salzburg’s kitchens has its roots in the past. For example, fermenting seasonal vegetables, smoking meat or preserving fruit. Discovering and exploring Alpine cuisine in SalzburgerLand is both an adventure and an exciting undertaking. And that’s why the pleasure trips are also a revelation for all those newcomers who have an interest in what they find on their plates.

The focus of the culinary identity of the Salzburger Land is the commitment to quality and tradition, regionality and seasonality. Farmers and alpine farmers refine dairy products, meat, vegetables and seasonal ingredients from nature and market them in their own farm shops and at farmers’ markets or believe that cooks and hosts in the region do so. During the pleasure trips in SalzburgerLand, guests go on an exciting tour of discovery that doesn’t just begin at the restaurant table and end after several courses: the pleasure trips also lead to producers, farmers or herb experts, who impress with their enormous knowledge.
Individual pleasure trips for lovers of good taste
“The new, inspiring pleasure trips lead to farms, to fishermen and goat breeders, to fields and forests, to cheese dairies and fine distilleries, but of course also to cozy inns and award-winning restaurants”explains Leo Bauernberger, Managing Director of SalzburgerLand Tourismus GmbH. “The tours are all designed in such a way that they can be undertaken individually. They offer guests both inspiration and complete freedom. The aim of the pleasure trips is to seduce people to enjoy. Nothing leaves such sensual holiday impressions as a fine meal, exciting conversations and inspiring, personal stories.” The pleasure trips are designed in such a way that, in addition to culinary addresses, they also contain numerous tips for excursions, visits to museums, activities or sightseeing. The pleasure trips are intended as inspiration and suggestions: They can be shortened, lengthened or linked to other routes as desired. Ideally also with addresses from the popular Via Culinaria Guidewhich includes around 330 hand-picked gourmet addresses.
“Chef’s Tours” with the “secret” favorite addresses of Salzburg chefs
Since early summer 2022, the gourmet tours have also included so-called “Chef’s Tours”, which are inspired by Salzburg chefs: they not only include culinary addresses, but also excursion destinations, sights and suggestions for activities. A special feature is dying “Cooking tour by Eckart Witzigmann” over three days in the footsteps of the chef of the century, starting from the city of Salzburg via Hallein and Werfen to Bad Gastein and on to Zell am See-Kaprun. die “Cooking tour by Andreas Herbst” From the restaurant “dahoam” in the Good Life Resort Riederalm in Leogang, connoisseurs are taken to the Sinnlehenalm, to the Museum Schloss Ritzen, to Edelbrenner Siegfried Herzog, to Herbst’s own gourmet restaurant and to the village shop in Saalfelden. With these addresses, the three-toque chef shows where his culinary origins and what characterizes his kitchen philosophy: young, contemporary gourmet cuisine meets extraordinary creations and regional down-to-earthness. die too “Lukas Ziesel’s Cooking Tour” leads to very personal gourmet addresses of the 2-toque chef, such as Tobias Bacher’s Rauchkuchl in Stuhlfelden or the Weyerhof of 3-toque chef Franz Meilinger in Bramberg. There are other chef’s tours from the top chefs Andreas Doller from Golling and Joseph Steffner from Mauterndorf, the range of tours is constantly being expanded.
“Chef’s Tour by Eckart Witzigmann” – on the trail of a cooking legend
This pleasure trip takes you to the culinary home of the chef of the century, who grew up in Bad Gastein as the son of a master tailor. Even as a boy, Eckart Witzigmann used to deliver his father’s coveted, tailor-made ski trousers to customers on a scooter, and he used to go in and out of Bad Gastein’s grand hotels at an early age. He completed his apprenticeship at the legendary Hotel Straubinger. Eckart Witzigmann has remained closely connected to his homeland, the Gastein Valley, and the city of Salzburg to this day. In the five-toque restaurant IKARUS in Hangar-7 he has been the patron of the globally unique guest chef concept for almost twenty years. On the evening of the first day fine dining is served here, during the day a visit to the Grünmarkt, the Balkan Grill, the Café Schatz in the passage of the same name and lunch in the M32 on the Mönchsberg are on the agenda. The second day takes you via Hallein and the Guglhof, Salzburg’s oldest fine distillery, to the 5-toque kitchen virtuosos Karl and Rudi Obauer in Werfen and in the afternoon on to Bad Gastein. In Bad Hofgastein, dinner is eaten in the Weitmoserschlössl and hiking the next day leads to skiing or downhill skiing, depending on the weather and season. After a day in the Gastein mountains, the journey leads to Prielau Castle in Zell am See, where Andreas Mayer, a long-time companion of Eckart Witzigmann, spoils guests. All addresses of the tour are personal recommendations.
A “Culinary Journey Through Time” to the Salzburg Lake District and “100% Organic Love”
Guests can experience old handicrafts, new technologies, traditional preparation methods and modern interpretations of classic dishes in one “Culinary journey through time” in the Salzburger Seeland: Visits include organic farmers, the Stiegl-Gut Wildshut, the fisherman from Wallersee, top chef Emanuel Weyringer and the new BioArt Campus in Seeham. The trip was designed by Salzburg chef Rudi Pichler, who also likes to go on tour for SalzburgerLand with “Rudi’s Road Trip”.
The seven-day promises 100% organic love Organic pleasure trip through SalzburgerLand, which is one of the organic pioneers in Europe. All businesses that are visited as part of the trip – farmers, producers, gourmet manufacturers, direct marketers, hotels, restaurants and inns – are certified and are fully committed to the organic way of life. Some of them are partners of BioParadies SalzburgerLand such as the Hotel Haus Hirt in Bad Gastein, the Hotel Forsthofalm in Leogang or the Hotel Post in the city of Salzburg.
