It’s the hatred of all Italians, but there are thousands of Portuguese who can’t live without them. In NiT’s script there is no canned fruit.
Pineapple pizza is something you won’t find in a typical Italian restaurant. By the way, having a suggestion of these Italy is something to irritate an entire country. It’s a hate, but it’s still better known as part of the menu of several restaurants around the world.
In Lisbon, we also find this controversial suggestion. More complicated is finding kitchens that refuse to use canned fruit. However, NiT was successful in this mission.
One of the good examples that you have to know in the city is Lupita. It is a small pizzeria in Cais do Sodré, but it works with pizzas as a large restaurant. The dough is fermented for several hours and the pizzas are cooked in the oven for all to see. Here they use pineapple from the Azores, which is roasted for a few minutes to gain a more caramelized flavor. It is peeled that goes into the oven and then cut into smaller pieces before going to the top of the pizza.
In this restaurant, only one of the pizzas on the menu has pineapple. The rest of the filling is made up of cheese, bacon, pickled onions and a touch of coriander, to make it fresher.
The same cooking or fruit technique is used by Luzzo pizzerias. In this case, don’t just place the pineapple on top of the base. Caramelize the pineapple so that it gains more flavor in each slice. The house pizza — which is precisely called Luzzo — also combines roasted Potobello mushrooms and crispy bacon.
