One of the most famous American delicacies and one of the most popular in the world, fried chicken started in the American South and spread very quickly all over the world. There is, however, a mystery as to whether the recipe belonged to African slaves, presumably brought from West Africa, or to Scottish settlers in the area.
Adrian Miller, who has studied Southern food a little, in his book Soul Food: The Surprising Story of an American Cuisine, One Plate at a Time, concludes that it most likely has no Scottish roots. Many times, of course, in the history of food there is not a single truth, because cultures interact and people influence each other. What is certain is that in 1925 in the book The Virginia Housewife, Or Methodical Cook by Mary Randolph, a white woman who lived in the American South, we find the first recorded recipe for fried chicken. And that in 1936 the Herald Sanders in Kentucky invented a new way of cooking in a pot and a secret mixture of spices and thus perfected it.
It is the well-known recipe of Kentucky Fried Chicken (KFC), which remains a secret to this day and which made fried chicken a global trend. Apart from the American, there are other popular versions of fried chicken, such as the Korean fried chicken, the classic Central European schnitzel chicken, the Kiev chicken and the katsu, the Japanese version where the breading is done with punk.
