Bordeaux : réputé pour ses pâtisseries coréennes, le Café 750 ne désemplit pas

It’s in a very small shop in the center of Bordeaux than Seongmin Hong and her husband opened in 2020 the Coffee 750one of the few korean cafes from the city.
At first glance, when you enter the pastry shop, it is difficult to imagine that it is possible to eat on the spot. Only two or three people can meet there.
But behind the counter hides a steep staircase that leads to a very small room where four tables separate from a room, decorated in a typical Asian style.
It is here that Seongmin Hong, who arrived in France in 2014, prepares, with the help of her husband, a whole host of recipes from Korean gastronomy based on local products. And every week new creations appear.
Korean specialties
On site, different teas and revisited cheesecakes, all from recipes that Seongmin Hong was able to discover during his childhood in South Korea.
Among the cakes, we find this week, Korean madeleines garnished with red beans or nuts, a tiramisu flavored with black sesame, a carrot cake or the cake of the day which is none other than a vanilla and cocoa with seasonal fruits.
“I still have family in Korea. My mother-in-law works there and she sends us a lot of different teas”, specifies the 31-year-old manager before adding: “We are looking for new ideas every day and we think according to the seasonal fruits that we found at the market and the grocery store. »
On the drink side, here too, a wide choice of Korean teas and drinks for winter and summer. “We have a tea with ginger, red beans and cinnamon. We also make hongcha latte, which is a black tea, or yuju & honey, which is a marmalade-style tea with green plums or dates,” she explains.
Overwhelmed by his success
Faced with the success of their concept, the building begins to become a little too narrow. “Even the kitchen is too small, three days a week, I have to go grocery shopping because we don’t have the space to store our products in large quantities”, specifies the manager.
To overcome this problem, the Korean couple has set up a clever system to manage the crowds: “Sometimes we have to refuse certain people, so we ask them to wait outside. We have installed a small bell that warns customers as soon as a space becomes available. »
Next year, the two owners plan to invest in a larger premises. But before that, they need to set up a weekend reservation system and open takeout orders in the evening via a delivery platform.
