In Marseille, a bistronomic menu at 1 euro for the poorest
In Marseille, the gastronomic revolution is not only happening through the new trendy bistronomic addresses that have been popping up here and there for a few years now. It is also played out in more confidential addresses where the emphasis is placed, above all, on virtuous and united gastronomy. In the Joliette district, Le République has made it its mission to offer seasonal, elaborate and local cuisine to everyone.
If part of the restaurant is reserved for “classic” customers who will have to have a menu between 25 euros and 30 euros, the other half of the covers will be entirely dedicated to people in need and in precarious situations, submitted by local charities. The latter will benefit from the same menu, but for only 1 euro.
“It’s not a solidarity canteen but a real restaurant in which some forty chefs will work, including many starred ones. What interests us is to offer our cuisine to all customers, without distinction, apart from the price. paid”, says chef Sébastien Richard to Parisianitself awarded numerous times by Gault & Millau. “It’s a first in France and I hope we can serve as a laboratory.”
For the beneficiaries, the service and reception will be the same as for any customers. At the end of the meal, they will pay their bill like everyone else, without anyone being able to know the amount they are paying. A program that allows people who do not usually have the means to go to restaurants to come and eat, but which also promotes a social mix that is too fragile.
The project has already received the support of many renowned chefs, from Mauro Colagreco to Alexandre Mazzia, via the IAM group or the Marseille actor Titoff. Just that.
