Cozido Barrosão wants to conquer Portugal: it already has a route through the country and a website | Gastronomy
First, a platform dedicated to Cozido Barrosão (or Barrosã) was launched, where all the information about the traditional stew from Terras de Barroso. Then, this month, the Great Route of the Cozido Barrosão was presented, which had a symbolic meal in the restaurant of one of the cooks who support the project, the Restaurant Days of António Dias in Montalegre. For 2022, a route is made along the way, starting with Coimbra in January.
The project, as explained in the presentation of the route, arose from the initiative of chef days and do chef Vitor de Oliveira, two “Lovers of the territory of Barroso”, between Boticas and Montalegre, declared World Agricultural Heritage by the UN agency for Food and Agriculture. The cooks create a platform for the sale of barrosão stew, where packages “comprised of salted and smoked meats and corrected sausages to prepare” the dish can be found.

Across the country, and in several cities, these “ambassadors” of Barroso will present what they consider to be “The most genuine stew in Portugal”: “Already it was time for Cozido Barrosão to leave its geographical borders and reach the homes of all Portuguese people”, they argue.
In Coimbra, the stew will be a star at the Tacho restaurant from the 5th to the 9th of January – the menu for one person costs 30 euros (with smoked ball as amuse-bouche, smoked alheirra and quince jam for starters, naturally the stew as the main dish , followed by toast with Port Wine).
The route will then follow cities such as Braga, Porto, Leiria, Nazaré, Sintra, Penafiel and Ponte de Lima, with plans to reach Costa Nova and Serra da Estrela.
For those who want to put their culinary skills to the test in the art of stew in Terras do Barroso, packages are sold online with essential products from local producers; and smoked meats are not billionaires: Head (Ear, Cheek and Nose), Belly, Leg and Ham, Meat Sausage, Pumpkin Sausage, Salpicão Entremeado, Sangueira, Farinhota. Other meats (fresh) and potatoes, plump cabbage and carrots must be purchased separately. The basket costs 47.50 euros (thought for four).
No place dedicated to this stew, accompanied by the route and can be made as reservations and purchases.
