It is in the heart of Bordeaux that Julien Kunika, also owner of the restaurant “Le Life” in Bordeaux, has decided to open his 14th establishment by combining the world of catering and the bar: “There is everything in the Saint-Pierre district, it is here that everything happens and it is a district that I particularly like. “
After a stint in the world of pizza, semi-gourmet restaurants, street food or even the hotel industry, the business manager wishes to revitalize this emblematic place for Bordeaux evenings.
“A new way to dine”
The concept of the place differs somewhat from what is usually done. Between 7 p.m. and 2 a.m., customers are first invited to enjoy the menu with Japanese influences before transforming the place into a cocktail bar where it is possible to dance in three different spaces.
It’s not quite a restaurant. It’s more of a dining bar, we come to share a moment of conviviality and I think that today, we meet more easily with friends around a drink to nibble and share food rather than sitting around a table for a classic meal.
The manager of the place still wants to keep the restaurant aspect of the place by offering a complete menu offering both classic catering, but also Japanese-style tapas.
Japanese atmosphere
On the kitchen side, a chef works on the Japanese part of the menu, especially sushi, rice and even maki.
We are going to offer a Japanese restaurant which in the party world today is not too much worked in Bordeaux.
To extend the “unique” side of the place, Julien Kunika invites his customers to interfere in the preparation of the dishes. “We have dishes such as ‘Le Tigre qui pleure’ or ‘Black Mada’ which are two dishes where there is a real game with the client since the client will be able to burn his salmon himself accompanied by the chef”, explains the chef. 44-year-old entrepreneur.
I wanted catering to blend in with the bar world and for us to have a real interaction with our client.
Setbacks due to the Covid
Acquired in November 2019, the establishment had to postpone its opening for two years following the restrictions imposed by the Covid-19 epidemic. While the Mada has only been open since October 27, 2021, the establishment must once again close its doors for at least four weeks.
Another hard blow for the Mada team after a long-awaited opening: “The discomfort we are experiencing with the Covid is unprecedented for us in this profession. You have to stay positive, you have to find solutions, find a way to continue working, keep smiling and it’s not always easy at the moment. “
