At Villa Barbarich the starred dinner that celebrates the magic of winter Events in Venice
Villa Barbarich, a prestigious relais on the outskirts of Venice, celebrates winter and its imagination with the “Festa della Neve”, a dinner-aperitif signed by the starred chef Paolo Gramaglia staged on Friday 20 January from 7.30pm.
A top-level tasting experience to be enjoyed in the splendid frescoed rooms of the Villa, rich in history and culture, to discover the best Italian food and wine tradition, among “local” dishes and aromas and tastes that recall the chef’s Neapolitan roots. The contrast between sweetness and acidity is the great protagonist of the first four courses: it starts with the flavors of the sea with the squid fettuccine with cucumber sauce, flying fish roe and black olive charcoal, the salmon in osmosis of cider and and the lemon tacos with creamed cod in saor, followed by the beef tartare with stracciatella cheese and caramelized onion, caper flower and passion fruit seeds.
The warmth of popular cuisine, with its slow preparations and the genuine richness of winter ingredients, is the trait d’union of the second part of the dinner: four dishes that alternate textures and complementary flavors on the palate, from the sapidity of montanare and vegetables and small fish with the sweetness of pumpkin risotto and parmesan velvety with balsamic vinegar buttons and porcini mushrooms to finish with the meatball with ricotta mousse and red Martini. The dinner then concludes with a homage from the chef to the Venetian tradition of the Festivities, with the pincer, the cake that accompanies family moments every year, from Christmas Eve to the traditional Epiphany bonfires.
