Seasonal minestrone with pesto: this is Hanna de Caen’s recipe

This Sunday, December 4, 2022, she explains how to make a seasonal minestrone with pesto.
To vary traditional soups, nothing better than minestrone, the hearty vegetable and starch soup of Italian cuisine. The richness of its ingredients makes it a complete dish that is cooked in a large pot. This recipe was traditionally made to use up leftover vegetables, so feel free to incorporate whatever you have on hand.
Ingredients
You will need for 4-6 people: 1 kg of vegetables (carrots, squash, cabbage, parsnips, celeriac or branch, potato, leeks), 1/2 can of crushed tomatoes, 3 tbsp of cooked white beans, onion, 2 cloves of garlic, olive oil, bay leaves, 50g of small pasta (shells, pearls, risoni), 2.5L of stock or water, salt and pepper
For the pesto: 1 bunch of basil, 60 g of parmesan, 100 ml of olive oil, 2 cloves of garlic.
Realization
Wash and cut the vegetables into small cubes. In a pot, sweat the onion and garlic in a large drizzle of olive oil with a pinch of salt. Add the vegetables (except white beans and potatoes) and sauté over medium heat for 10 minutes.
Add the tomato and bay leaves, then add the broth. Bring to the boil, then lower the heat and simmer for 20 minutes. Add the cooked white beans, potato and pasta and continue cooking for 10 minutes. Taste and adjust seasoning with salt and pepper. prepare the pesto by mixing all the ingredients.
Serve the minestrone hot in deep plates, garnishing with pesto, basil leaves and parmesan shavings to decorate.
