Christmas shopping 2022 goes through Arles, Avignon and Marseille
You don’t change a winning recipe! To celebrate the end-of-year celebrations for the 2022 vintage in the traditional way, Guillaume Bacqueville and Emeline Lallemand, driven by the success of their Christmas logs supplied for the first time 3 years ago, are offering a very gourmet collection again this winter. “These are sticks in individual portions, mounted on a stick because it is our identity, explains William. They are all made entirely by hand and are based on exclusive recipes”.
The recipes were developed last summer and finalized at the end of August by Emeline. On the menu, two unmissable best-ofs: choco on the whiskey (chocolate-orange-whisky) and Chaud les brunes. Finally, three novelties this year: a kalamansi-timut pepper and candied orange sorbet, a gianduja ice cream and a Tatatiiiiin, “for the pleasure of apple and mascarpone”. Production will begin in early fall and continue through late December to accommodate latecomers. “We use local products whenever possible, cream and milk from Gap and Ardèche, fruits (pears, peaches, melons, strawberries) from Provence”, continues William. Emkipop will celebrate its 7th anniversary in February 2023 and has 25 people divided between the manufacturing laboratory and the three stores, in Aix, Marseille and Paris.

Sÿba is an Avignon brand of artisanal ice cream, 100% vegetable, committed to an approach that respects the environment. Since 2019, Mickaël, the pastry chef, has imagined 100% vegetable recipes, excluding materials of animal origin such as milk or eggs and guaranteed without gluten or additives. In a 300 m2 laboratory located in Avignon, the team works with vegetable milks (almond, hazelnut, buckwheat, hemp, etc.) and fruit from the local agricultural basin. The company offers every year for Christmas, an original log ; Christmas Eve 2022 will be “greek style” in collaboration with the Marseille brand Mo’Rice (on a base of lactofermented Camargue rice and coconut milk). The recipe mixes a morello cherry sorbet and a morello cherry coulis for a perfect balance between smoothness and acidity. The log is placed on a crispy biscuit with corn flakes golden in the oven and a generous pistachio puree. The whole thing is topped with vegan white chocolate.

For the holidays, Thomas Bigourdan enriches his collection of ready-to-serve cocktails. After the N°1 Negroni and the Soho Negroni, make way for the Negroni Matador! The Camargue distillery is associated with the liqueurs of the creator H.Theoria and the Dolin house for the creation of this cocktail. Negroni Matador shakes up the codes and displays his dark dress and his thick heart. It is a velvet of Matador Love spurred on by London Dry from Arles, whose round and rich notes of vermouth come to calm the impetuosity. At the origin of this cocktail, there is the meeting of Camille, co-founder of H.Theoria, a French spirits house, and Thomas, creator of Bigourdan – Distillerie de Camargue. When Camille proposed to Thomas to marry his Amour Matador liqueur and his Gin to reinterpret a classic of classics, the arenas of mixology trembled. A delicate duo accompanied by a dose of red vermouth from the Dolin house, and the Negroni Matador was born!
